You could fill a kitchen with handy (or less-than-handy) gadgets, but there are only a few tools that a person absolutely needs every time they cook, among them a set of kitchen knives.

I’ve worked for more than a couple food magazines and websites, and had the opportunity to test dozens of knives over the years, which touted a wide array of features.

What I’ve found is that there are only two important considerations when choosing a good knife: Is it comfortable to hold, and can I easily get it sharp?

No one will use an uncomfortable knife for very long, but the importance of that second question is vastly underrated. Knife makers love to tout how long a knife will stay sharp — and any knife you buy starts out sharp as a razor, of course. But no matter what, eventually, it’ll get dull — especially if, like me, you bang it around, run it through the dishwasher, toss it in a kitchen drawer with other knives, or generally treat it poorly.

But if you can easily get that knife sharp again — sharp enough to slice an overripe tomato without turning it into mush, you’ll love it forever. And if you can’t? It’s useless, and you need to replace it. That’s why one of the things we recommend is buying knives with built-in sharpeners. The more often you sharpen a knife, the longer it’ll stay sharp, and the less likely it is that you’ll end up with a drawerful of dull knives you don’t know what to do with.
